What did I cook this weekend.....

I made carne relleno in the slow cooker last night. I forgot to take any pictures, as usual, but here is a link to a YouTube content provider to whom I sent the recipe, and she posted how she did it (slightly different than my instructions, but that's OK) if you are interested in seeing it. It...

What did I cook this weekend.....

Mmmmm I love me some birria. It's just DH and me around here and we opted for hot wings with chile lime sauce and veggies with bleu cheese dip, which I just finished making. The wings are all cooked and sauced and I'll throw them in the air fryer when it's time to eat. Easy peasy. Dude...

What did I cook this weekend.....

I made a big ol' three pound crusty-baked meatloaf and a pan of tri-colored sprouted quinoa last night. Sorry, no pics, as usual I forgot! I also got a recipe of mine on YouTube by another content provider, Marcy Inspired. She's very talented with her videography. That was fun!

What did I cook this weekend.....

That would be just dandy with me, it's the way I cook! Never met a recipe I couldn't tweak and seldom cook one without tweaking one way or another. So, whenever you have the time/inclination fire away! And thank you in advance.

What did I cook this weekend.....

Merry, tell me what you like for your salad - I bought a mix of kale and cabbage and broccoli slaw, looking for good ideas!

What did I cook this weekend.....

Mmmmmmm curries! I need to learn to make more of them. I make a mean Butter Chicken, pork Vindaloo, and saag paneer, and my favorite is Panang Curry. If you ever feel like sharing the ones you like, Corky, I'd love to copy them off and try them!

What did I cook this weekend.....

I would like to invite myself along to that trip! ;) Merry, so glad you contribute regularly to this thread and always with lovely photos. I still can't seem to train myself to take a picture at least of the plated food. Once it's on the plate, it's on the table and in my face with no stops...

What did I cook this weekend.....

Those chamber vacs are not for everyone, for sure. The older one we had, we kept in the laundry room until I reconfigured stuff to get that rolling cart. Like AzOr, we DO use ours a lot - and DH seals many shelf-stable items in canning jars. For example, we take our coffee beans and...

What did I cook this weekend.....

If you aren't opposed to spending a chunk of change on one, we have a chamber sealer we really love. It's an Avid Armor and this is the one: Avid Armor Chamber Vacuum Sealer Guide Series GS53 Oil Pump Machine We got it directly from Avid Armor last summer and it was about 1400. It does a lot...

What did I cook this weekend.....

Coming from central coastal CA, we are very used to "CalMex" and we haven't found many restaurants here (northern Colorado River area of AZ) that prepare foods to our liking. BUT there are a couple of recent discoveries that are decent. One of them, DH ordered his favorite dish, chile verde...

What did I cook this weekend.....

I need to make some posole! Haven't made any in several years. Sounds really good as our weather cools off a bit. (Only 67* right now....)

What did I cook this weekend.....

Mmmm, yes, Corky. We love quinoa too, and I do buy this sprouted brown rice that's really good. We don't use that often though. Potatoes are a rare luxury but I did indulge in twice-baked taters New Year's Eve! One of our favorite dishes for breakfast is machaca, although we prefer it made...

What did I cook this weekend.....

We had Hoppin' John with homemade blackeyed peas and ham that I canned last year. We try to stay lower carb so we had kasha instead of rice. It was a lovely combo!

What did I cook this weekend.....

Yes, Happy New Year and thank you to all who post photos and menus here! I'm gonna try to remember to take photos more often in 2025.

What did I cook this weekend.....

No pictures but - we did a small 2.25# prime rib roast (just two of us) and cut it right down the middle when done! :). We also split a big baked sweet potato in half, and topped it with butter and crispy bacon bits. Some homemade cranberry/jalapeño sauce that I canned at Thanksgiving and a...
