    a blower style fan can usually move more air than an axial or pancake fan. may be worth a try. may also be worth adding a diffuser at the top of the fan duct to disperse the cooler air horizontally across the area rather than direct it towards the lid?

    As WS Smith says…. the primary differences between residential and commercial in a direct draw system will be the cooling durability/power/efficiency…. if that’s not presenting any issues for you, perhaps simply updating the serving and gas lines for better serviceability is all that’s needed...

    i think carbonation cap + PET soda bottle + Co2 tank and regulator is the easiest option for very small volume cocktail,recipes. can do 1L or 2L sizes in soda bottles. After carbonation can be kept in refrigerator and pour as needed.

    Warm taps foaming initially

    When i ran a keezer i had extra long shanks through the collar and would see condensation on the perlick faucets in hot weather. it might be worth the experiment to switch out ONE of your shanks for an extra long one to compare the difference before going all in.

    As an alternative to paintball tanks you may want to also look into Sodastream tanks, which can be much easier to find at any Bed Bath and Beyond, usually cousins available and it's a drop off empty, pick up full sort of deal versus someone filling the paintball tank and you counting in them...

    Something to note is that fermenting at warmer temps result in less CO2 in the finished beer before further force carbonation.... so those batches where you think they are undercarbed may be because they were fermented at bit warmer? It's less of an issue when you ferment in the 60's under...
