    Water Profile and Beer Flavor

I'm having the same issue with a all grain Red Ale. Too bitter, almost undrinkable. I will taste it again in a week (first test was 1 month ago) but it's almost impossible to loose all this bitter taste only with aging (I guess...). An other batch, a Australian Blonde Ale is pretty bitter too...

    Thinking of Kegging...

+1 for kegging! I first bought bottles wich were very expensive (easy cap) and beside it's easier to transport, I think it's easier to clean and sanitize a keg than 80 bottles for a batch. Then I switched to Tap-a-draft (wich is still pretty cool for parties - 6 liters tank with small CO2...

    Witbier fermentation question

Hi, my fisrt batch of wit is at the primary stage. I used White labs Belgian Wit liquid yeast. The recipe says 4 days in primary, 10 days in secondary. The other recipe I look at almost only use primary for longer time. I also want to keep my yeast and reuse it later. What is the best witbier...

    Coriander seeds VS powder conversion

Hi, I'm starting a wit tomorrow and I have a small problem. The recipe needs 50 gm of coriander seeds, but all I have is coriander powder? Should I use 50 gm of powder? People at my local store told me to reduce the amount. I much should I add to a 5 gallons batch? Thanks for your help, this...

    Yeast starter questions

Hi, I've made my first yeast starter 24 hours ago. I use Whitelabs Belgian Wit yeast. I've made a 600 ml wort at 1.040 with pale DME. There is a slow yeast activity (few movements in the wort) but no bubbles in the airlock. I know it's pretty soon to worry about, but it's the first time I see...

Hi, this question is for witbier experts ;) I'M planning my first witbier next weekend and I wonder if there are tips to make it troubled as commercial wit. I know it is not the best thing to do with wit, but I plan to keg it. Should I transfert part of the yeast bed into the keg? So, do you...
