    Very true, the detent feature is cool, but not really necessary. It's easy enough to use a feeler gauge, plus there's a more infinite range of adjustments and you're not limited to .005" increments (not that this is a huge amount anyway).

    Yikes! I read How to Brew, but was fortunate to have a very experienced brewer willing to help me get started. He suggested leaving all ales in the fermenter for four weeks. It's tough to wait, particularly for that first batch, but I can't argue with the results on my brews so far!

    Make-shift blow off hose

    Likely, the tubing you have isn't 1/2" inner diameter. Many folks use slightly smaller inner diameter tubing on their siphon to get a really good seal. 1/2" inner diameter tubing fits over the middle of a three piece airlock with minimal effort.

    I agree with the suggestion to gently stir with your sanitized brewing spoon once racked to your bottling bucket. My first batch had some well carbonated bottles and a number of low carbonated bottles as well. I gave my latest batch, a tripel, a stir. I'll know if it worked in about another month!

    1. I let my first batch cool overnight in the bucket since my kettle wouldn't fit in my sink (turned out fine). A chiller was my first upgrade and was completely worth it.

    Odd, I opened a bottle of Sam Adams Octoberfest and it tastes horrible too. Maybe I have a bad taste in my mouth or something. To be clear, though, if it tastes good refrigerated for a short time, there wouldn't be any reason it should taste worse after a day of refrigeration, right?

    I did prime as you described. The dissolved corn sugar solution was poured into the bottom of the bottling bucket and the siphoning did the mixing. I did try another bottle and it tasted the same.
