    Only one in LV and it's about 30 min from me. Prices are not too bad so I like to use them if I can. But the only convenient time for me to stop by there is if something else has me on that side of town. Needless to say I always double and triple check my list when I plan a brewday.

    +1. Rotting isn't just a spontaneous process. It is the result of microorganisms breaking down the fruit. The only microbes that will be in your beer are hopefully the ones you chose to pitch into it. Don't worry about any bad "rotting" taking place if you were diligent about sanitation.

    You might want to check out the book "Brew Like a Monk.". I've heard it has a lot of info and gets pretty in depth on the technical side of brewing Belgian beers. I haven't read it myself, so maybe somebody that has can chime in about it's contents.

    Kettle size & to Full Boil or Not

    Full boil would be better, but only if you have a way to get that much wort boiling. A stove might not be strong enough. Also, you'll need to consider that cooling a larger volume of boiling wort will be much more difficult, so you will most likely want a wort chiller as well.

    I agree that it is either cold break or hot break. That's a good thing. It means that you got certain proteins that you don't want in your final beer to precipitate out of solution.     Like I said earlier, I would totally recommend them. And you're right, Todd is a good guy that freely discusses brewing with people in the know(or just anyone showing interest). I got a growler of their Cream Stout from them this week and it was really good. A great digestif.
