    Most ferment in either a bucket or 6.5 gallon carboy. Then, if we secondary, we secondary in a 5 gallon carboy. Then, if we bottle, we rack to a bottling bucket that has a spigot.

    1. The activity from the siphon should be just fine. I typically add the priming solution, then rack into the bucket on top of it. 2. Yes, a 5 gallon carboy with blow-off should be fine. 3. Yeast doesn't really add flavor or aroma, it add character.

    Transporting Beer on Airplane

    I typically wrap them up really well, usually with bubble wrap, and then put the bottles into some sort of ziploc container in case of breakage. Then I pack them up tight between my clothes for extra protection. So far I have not had a bottle break on me during travel.

    Trub Question

    Are you using an auto-siphon? If so there should be a little cap on the bottom that will help prevent regular trub from transferring to a new vessel, it's not so good with fruit related trub however and I would recommend elevating the end of the siphon slightly to keep it off the bottom.

    Make a starter and you'll be good to go. My lhbs sometimes sells me out of date yeast at a discount, I've used vials as old as 18 months out of date with no problems.

    Bulk aging or bottle aging for big beers

    I would definitely bulk age it for a few months (3-4 if it were me) and then bottle and age for another few months. I bulk aged my Wee Heavy (1.089 OG) for 6 months and had no trouble getting it to carb up in the bottle.

    I used my bucket probably 20 times with no issues before I finally got a glass fermenter. As long as you are being careful I think they can last quite a long time.
