    You should be fine leaving it another 2 weeks, I routinely leave beers a month in the primary. As for moving things around, personally I like to bottle in my kitchen so I would say bring the fermenter upstairs a few hours before bottling and then do all your racking there.

    Sounds like you used a bit too much extract (it's almost impossible to screw up the OG when using extract). Next time, use less fermentables and you won't run into this problem.

    If you've had an airlock on the whole time and have been reasonably good about refilling it with santized water I wouldn't be too worried about infection. Even if you hadn't, never assume you have an infection, re-pitch and see what happens.
