    Weird half and half ferment.

This is not a camera illusion: http://www.campbell-multimedia.co.uk/wordpress/wp-content/uploads/2012/01/IMAG0325.jpg The two halves look completely different. Different levels and colour of foam. EDIT: I had to open it to have a peek. One side has dark yeast slurry on top of the foam, the...

    Batch 4 - Coopers Draught + stuff

... and again, Coopers yeast, 5 days in FG 1.018, 8 days FG 1.018. I'm hoping for lower than that. I've moved it somewhere warmer to see if anything will happen this week. Aiming to bring it up to 24C/75F and then move it back to 22C ambient. If nothing happens, I'll just bottle it on...

    Bottle bomb?

Update: I kept releasing pressure until it had been brewing a full week, then chilled it for a day. It still smelt of sour lemon, but tasted fine if a little thin. We dumped it as a successful prototype. Going to let my GF boil up her normal ginger and lemon drink, then add sugar, yeast and...

First non-kit recipe, need process advice.

Woo, WYeast certainly have some kick. This morning, only 18 hours after pitching the airlock is bubbling ever 5-10 secs. Temp had risen to 22C, but I have the window open and it's cooling back down. This is my second "premier" yeast brew and I definitely feel there is a notable difference...

First non-kit recipe, need process advice.

Jobs done. Everything more or less went to plan. I went for the 1kg before the boil and 2kg after the boil. Hops 1 for 30mins, Hops 1+2 for 15 mins. Cooled to 35C, topped up with tap water and got 20-22C. Took an OG reading, 1.047-8. Pitched yeast. Ah, one problem was the WYeast smack...

First non-kit recipe, need process advice.

Thanks guys, Herbie, your late DME approach takes into account another problem I will probably experience, that is my stove might take an annoying amount of time to bring the wort back to the boil after the second DME addition. Which as you say will through timing out etc.

    Og 1.045 - fg 1.008

Well I bottled this today. Original ingredients were, Coopers Real Ale, 500g Light Hopped DME, 700g sugar. Made the mistake of boiling the LME for a few minutes. Result.... Brown Ale, looks awfully like Newcastle brown ale, but that's probably as that's the only brown ale I've seen. It's a...

First non-kit recipe, need process advice.

Ingredients (as per my other thread), 3kg light DME 250g Caramunch 250g Light Crystal 50g Willamette Hops 50g EKG Hops WYeasts Irish Ale Yeast My first thoughts for process are: Raise 2gl water to 65C (155-160F). Steep both grains for 30 mins. Add 1Kg of DME Bring up through...

where does all the air go?

+1 Homer. I have come to this same conclusion with my buckets. A tip for the OP. Empty almost all of the water out of the airlock, leave the absolute minimum to keep it being an airlock. Then rotate the lid a bit until you find the point it resists most to being rotated. This is the point...

    Is my hydrometer reading ok?

It's too early to tell if it's going to work or not. If you pitch yeast into it at a sensible temperature, it will happen. I've only brewed 4 batches, but the longer I've had to wait on it "kicking off" was 36 hours. There is a sticky post on this section of the forum saying it can take 72...

    Carbonation and cooling temp.

I have observed that my beer seems more fizzy when warmer. Terms of reference: My beer fridge can freeze beers if your not careful. If the fridge is otherwise empty and you put the beer in the wrong place, it will freeze in 12 hours. So "cold" is about 2-4C, warmer is 5-10C (3 hours in...

    Disappointing sample bottle.

I'm fairly happy with this... I need to manufacture a proper light stand for beer photos :) A 20c LED torch works, but doesn't really cut it. Full size: http://www.campbell-multimedia.co.uk/wordpress/wp-content/uploads/2012/01/IMAG0304.jpg

    Is my hydrometer reading ok?

See what I mean, though this one is particularly messy, I think.

    Is my hydrometer reading ok?

I'd seal it and wait. You will notice when it happens.

    Is my hydrometer reading ok?

izuel01 I have two of those Young's fermentation buckets. Do not worry, they do not seal tight enough for the lid to blow off* it is difficult to get an airlock to work at all with them they leak that much. Actually I think, if you leave it "cracked" open the first few days you risk the...

    Disappointing sample bottle.

Well, in a moment of weakness (I'd had a few cans :drunk:) I tested another bottle. So it's now, what, 10 days old. Chilled a bottle in the beer fridge (1C) for Friday tasting, but my alcohol impatience got the better of me and I thought, "what the heck..." Opened the bottle and nothing...

Moving up to the next level

Is it possible to move towards all grain in steps? eg: An dry extract recipe might have 6 or 7lb of DME for 5gl... Could you BIAB steep 3lb of Mavis Otter and add 3/4lb of DME? I think it's relevant to the OP, but I'm also interested as I won't be able to use a 5gl boil anytime soon (if...

    It exploded.

Your scaring me... my 2 are sitting on my lovely carpet... err... actually my landlords lovely carpet! Now I'm glad I didn't seal my bucket lids! Low airlock response I can live with, an exploded fermenter all over the carpet I cannot :)

Anything wrong with shaking the homebrew/wine after it starts to ferment?

I was just asking a question, not saying you are wrong. If someone tells me that kicking the cat will not do anything and I kick the cat and it shreds my favourite curtains, I may be inclined to ask, "Then why did my cat shred my curtains."
