    Sodium alginate for head retention

    I've never even heard of it. Is it available for purchase? Did you read somewhere that it helps with head retention? There is head retention powder, it consists primarily of guar gum. I think Northern Brewer sells it.

    Do you have any GF beer (commercial) recommendations?

    I have a recommendation: don't buy Tweason ale! Blech! I bought a 4 pack of that this past weekend--I'd never had it before but heard good things. EIther my batch was skunked or that stuff is just plain bad.

    I would agree with the article if it said "broaden your expectations" for gluten free beer. It is irrational to eat or drink something made from one ingredient and expect it to taste exactly like something made from a different ingredient. GF grains are different than barley or wheat or rye...

    Arsenic in brown rice syrup?

    Wait...are you saying there is something harmful in our beer? No way! Aren't we already engaged in something that is harmful to our bodies? You know, alcohol. Alcohol is a toxin, it kills microorganisms and if you drink too much of it in one sitting you can die from alcohol poisoning.

    This is why we need a a GF recipe database. No-nonsense stout, dual spires black lodge ale or lcasanova's brown ale are all popular. You can also check out FB which has a gluten free homebrew page with a ton of recipes.

    You are going to use 4lbs of D-180? I realize this is for 6 gallons but that is a lot of candi syrup. If I were you I'd scale it down. Also consider mixing up the candi syrup--180 and 90 for some complexity of flavors.

    No Nonsense Stout

    I have always added candi syrup at the start of the boil, however FWIW candi syrup inc. recommends adding the syrup at flameout.

    If your local supplier isn't very reliable you can always go online. I buy most of my ingredients for homebrew from Amazon. I also used Northern Brewer once.

    Hmm...I've never entered it or thought of it until now... As for you I'd recommend the Grapefruit IPA. I saw my brother-in-law the other day and he brought it up and wondered if I had any left. It was wildly popular. BTW--your Black IPA recipe looks awesome!
