    Cascade APA (gluten free)

    This is coming along quite nicely. I cracked open the first couple of bottles on St. Patrick's Day--very pleased! This will be a good beer. Next time I think I'd up the sorghum by 1lb and lower the corn syrup by 1lb but that is the only change I'd make.

    I think your "twang" is primarily coming from the choice of hops. Sorghum adds a "twang" though I've never actually tasted it. I second Igliashon, it will mellow with time.

    yeah basically that it is 100% juice. A while back someone posted a thing about a cider that had barley malt in the ingredients.... It is crazy the things they will put in well, anything. But yes, just make sure there is no wheat, rye or barley in the juice.

    yes, I've made that cider before. It is excellent. I'm not familiar with Wegman's, but just check the apple juice and concentrate before using it. Should be okay though.

    The only thing I'd recommend is adding 8 oz of maltodextrine for body. Oats help, but on their own I have found the beer still lacks some body and will come out a bit thin.
