    Northern Brewer hops with Pilsner Malt

    I recently made a very nice lager. If I recall correctly, it was 2# pilsner, 3# 2-row, 1# light munich, 2# corn, .75 oz Northern Brewer (60 min) & 34/70 yeast at 62*. It's extremely tasty, for the fans of light lagers. Most folks would never know that it wasn't fermented cold.

    Test/control your mash pH & let the yeast clean up, before bottling. Just because you don't see bubbling doesn't mean that the yeast are done doing their job.

    Be aware that the 5.2 buffer will not work if your water is high in alkalinity. My water has bicarbonate content over 350 ppm & renders 5.2 useless.

    Switch for element

    You'd be better off with a 30 Amp Switch. 20 Amps won't cut it... 5500 / 210 = 26.19... Too much amperage for that switch. I'd suggest returning it.

    I'd say you should get yourself a 1500W element & maybe a PWM. (Although the PWM might not be needed in this case.) Don't mess with the apartment wiring or outlets.
