    Hops in Minnesota - if you could only grow 2

    I currently have Horizon & either Sterling or Liberty (I can't recall.) The ones I can't recall have never flowered, in 4 years. They will get replaced with Northern Brewer. The Horizon do quite well.

    Can someone please tell me how to install this weldless ball valve?

    Looks to me like you're missing a lock nut. Washer & coupling go inside the kettle, while o-ring & nut get placed outside. Who's the supplier?

    False Bottom Material

    I bought 15"x15" stainless perf sheet at my local metal supplier, for $25. Bought a stainless hinge for $15, at Lowes. Picked up #8 stainless screws, washers & nuts, at Lowes for probably another $8. For roughly $60 (adding the price of cutting discs), I got this: I also added a...

    Conditioning grain == awesome.

    Mine's set to .024" & works nicely. If your mill gums up, you used too much water.

    I was scolded at LHBS today when I told em I don't usually use a secondary

    Your response should be: "Whatever, Gramps...Pick up a brewing book that was written after the turn of the century". Then, start going to a new brew store.

    Conditioning grain == awesome.

    Sorry...I've never brewed with wheat. My wife & I are not big enough fans of wheat beers, to consume 5 gallons. Wheat beers would take up precious keezer space, for far too long.

    The great "What size kettle" question

    Definitely 15 gallon. Are you absolutely set on Blichmann? I have two stainless sandwich bottom 15 gallon Update kettles from waresdirect. Much, much cheaper, but IMO better durability. I drilled & installed my own fittings & was able to decide where I wanted everything. But...If...

    what went wrong?

    Two weeks old is very 'green' for a strong ale. If carbonation is making it worse, it could be that the development of carbonic acid (normal) is adding more of a bite, thus compounding your experience. Let it age.

    Conditioning grain == awesome.

    I condition in a tray I purchased at Home Depot that is intended for mixing concrete/mortar. I spray & mix, then check whether I can grab a handful of grain & have a substantial portion stick to my hand, when opening my fist. Then, I allow the grain to sit for roughly an hour. This gives the...
