    IMO I would cut back on the hopshot and add in at least 0.5 ounces of Apollo at 10 or 15. I would also think about replacing 1 - 2 qounces of the Columbus whirlpool with Amarillo, Citra, and/or Mosaic

    100% Vienna malt with Amarillo and some Simcoe sounds tasty. I'm not a big fan of Amarillo by itself.

    This is terrible advice. 7.5 gallons is a normal volume to start a 60 minute boil. 70% is a pretty normal efficiency, I would expect 65 - 75% depending on your setup. Biscuit malt tastes great. 0.75 lbs of crystal is fine. I'm pretty sure Sierra Nevada Pale Ale uses a full lb for 5 gallons...
