    Cough Syrup

To get to the point, I've made a handful of meads that end up with a strong cough syrup flavor. Among these are Pear melomel, Strawberry melomel, a semi-sweet traditional, blueberry vanilla, and a cyser. All of these came out with medium- to strong- levels of cough syrup flavor. I want to get to...

    Sweet Raspberry recipe questions

Just wanted to do a quick update, I went ahead with 1.090 for my starting gravity and White Labs Sweet Mead WLP720. I thought I'd read the alcohol tolerance was 11% so I figured I'd be left with a little bit of sweetness, but I am now reading that it's 15% and as such it fermented out to 0.999...

    Sweet Raspberry recipe questions

Thanks for the responses guys! I think I'll take the advice and back it down to somewhere around 3 pounds. I'll add the juices and tea in primary, and I'll probably even add some of the raspberries in primary and then add more in secondary since I've already frozen and thawed about a pound of...

    Sweet Raspberry recipe questions

I've seen this recipe a bunch of places, so I decided to buy the ingredients and give it a shot: 4.5 pounds filtered, unprocessed wildflower honey 1.5 pounds red raspberries Juice of one lemon Juice of one orange 3 tablespoons of strong-brewed black English tea 1 teaspoon yeast nutrient...

    What's your favorite mead style?

My favorite I've made was triple berry (blueberry, BlackBerry, raspberry). Final gravity of about 1.005 after adding just the berries in secondary, so fairly dry which is usually how I prefer it. Otherwise my spiced cyser is a close second (unfiltered apple cider, cinnamon, brown sugar and...

What do you drink your mead out of ?

I go with either a wine glass or my personal favorite - a mason jar.

    Soda water for carbonation?

Thanks! I'll definitely look into this. Is one CO2 cartridge good enough to carbonate the entire liter?

    Soda water for carbonation?

How much does this setup cost, and how does it work? I'm unfamiliar with it

    Soda water for carbonation?

I use clear 12oz beer bottles. Would this work with those?

    Soda water for carbonation?

At the moment I only make 1 gallon batches and don't have the means to force carb my mead. Being that you can't carbonate mead without a keg system unless you allow it to be extremely dry or very high alcohol (and relying on the yeast to die out at a certain %, which hasn't been too reliable in...

    Experimental "marshmallow" mead

That's my biggest problem, as I only am able to do 1 gallon batches right now and it's tough having that kind of patience, although I've got a buckwheat batch right now that I will have noooo problem waiting 2 years before I taste again

    Worst thing I've ever tasted

Bourbon?? Now you have me regretting adding the grape in the first place. That sounds like a winner!

    Worst thing I've ever tasted

Just looked at my recipe, apparently I used roughly 1 pound of buckwheat to 2 pounds of clover, my mistake! Now I shudder to think what it would've been like with only buckwheat.

    Worst thing I've ever tasted

I bought mine from a local apiary here in Minnesota, maybe theirs just has a different taste... don't get me wrong, I'd probably enjoy it on toast or something else, but fermented? No thank you!

    Worst thing I've ever tasted

Not really an interesting thread-starter, but more of a personal self-lesson on learning about honey varietals. Last spring I went to a farmers market. There was a stand that was selling unfiltered honey. When I went up, the woman offered me a sample of buckwheat honey and I gladly accepted it...
