I just got my water report back from Ward Laboratories. For $16.50 they will give you the homebrewers report that will tell you all of the pertinent ions. I sent off my sample and got my report in less than a week via email.

In Beersmith, are you looking at the brewhouse efficiency or the efficiency into the boiler? BobbyM. has a good write up on the differences at his website. I confused the two in Beersmith myself and thought I was getting efficiencies in the 60's, when I was actually in the 70's.

Yes. The racking arm is up during fermenting and is covered by the wort. When you rack off your beer it gets adjusted based upon the depth of the cake at the bottom. I have not noticed an excess of beer loss in my 14 gal over my 7 gal. conicle

It's fine. I do it frequently. All the CO2 that gets produced pushes the O2 out. You dont ever need to open the conicle unless your doing an addition as you pull samples from the racking arm and drain from the bottom.

I brewed this as a partial and thought it was terrible when it was green. I actually thought it might have been infected. A week later though it was a whole different beer. Give it some time and see if it changes. I'm gonna try it AG again in a few weeks!
