    Did you use a starter? Perhaps you needed more yeast? Or maybe the temp was too high? Oxidation could also be the culprit. I've had a few beers where I know they were sanitary, they were exposed to air via auto-siphon and turned out with the dreaded cardboard taste. On a side note, how...

    I would go ahead and crash cool. If you have a wine thief, sanitize it and steal a gravity sample. Then if you're at gravity, crash for a day and bottle/keg.

    Brewed this on 4/23. Life got crazy, bottled on 5/28. Life got crazy again, cracked my first bottle today. Really crisp, slight bitterness gives way to a nice citrus/tropical finish. I've had a few bad batches recently so this is a welcome success. Bottled it in bombers, so..... yeah.🍻

    Yeah, their software is limited, it needs to be integrated with something that allows more margin and format controls. Their attempt is admirable, but they don't make it easy for support. I'm going to transfer it to word and tinker with it.

    No print preview. That was my original thought, but HP has dumbed down the printing software. I have no idea about illustrator, is that an Adobe program?

    It shows up normal size in their interwebz program. I've fixed PART of the problem, there is an option to save as a PDF then print from there. It's now the right size and direction, but alignment is off. If I move it in either direction to correct it, the labels in the opposite direction...

    Does anyone know what I need to do to calibrate for the labels? Is there a template to Use? I used the template they have on the website, added my posts and text, just need to print now. My printer is fitting all four labels onto the space for one.

    Shiner Prickly Pear

    Stopped by Fiesta today and they have very ripe red and white(?) prickly pear fruit at 4 for $1. I picked up 6.75 lbs. They also have some at HEB.

    Ditto. First non-kit beer I made and it was off the chain. Served it at a neighborhood BBQ, and it was absolutely a hit. Aiming to have a batch of the Blood Orange version ready for 4th of July at Lake Texoma.

    I've got two of them. They do great, I have to use the heavy rubber bungs with them and kind of twist them in. I wish they were glass though.

    What about a clamping ring that goes around the lip of both the fermenter lip and the lid? Similar to what goes around chemical barrels and buckets. What is the diameter of the lid and lip?
