    Man, I love Apfelwein

    I used Premier Cuvee yeast for my apfelwein - if I added sugar and/or apple concentrate when the yeast started to slow down, would it stop fermenting when it got to 18% and leave some sweetness? I think I'm wanting to do it 'still' this time - but try sparkling next time. I'm just not into...

    I put together my first gallon this afternoon - 1 gallon juice, 1 cup sugar, premier cuvee yeast - it's already bubbling away just after a couple hours!

    9430 + 1 = 9431 my first gallon - I chickened out to fill my 6 gallon carboy, LOL.

    that's what I was looking for! thanks! so, a sherry yeast would be for higher sugar/higher % alcohol..... might be interesting to try some of those recipes for the fun of it. Glad I have several 1 gallon bottles now!

    Back-sweetening cider...

    if you backsweeten the 5 gallons with a can of concentrate w/o killing the yeast - will it make bottle bombs?

    Is there anywhere that has a list of different yeasts and when/why to use which kind? I was reading a wine recipe book, and several recipe's have said to use a sherry wine yeast - I was wondering why a sherry wine yeast in some cases?

    I've gotten a carboy, stopper and airlock, various wine additives including yeast, a wine thief, and loads of encouragement from my local wine store. They don't have anything that is beer related from what I've seen though - I would like to try some malt extract for some ''hard lemonade'' type...

    my local wine shop didn't have any larger one's...... I'll have a look at the HW store while I'm getting a tube for racking and see if they have a bung the right size.

    I found a tea recipe in a book I got with a bunch of other wine supplies from freecycle - I mixed it up and it's bubbling away this morning :)

    moving from primary to secondary

    thanks, I'll be headed to the HW store today - will have to think of how to keep it off the bottom of the bucket so I don't suck up the sediment too.........

    what do you use for air locks? The regular plugs on the airlocks that I have for carboys are too small for the neck of the water bottles......

    moving from primary to secondary

    the wine store was out of the tubing/cane for racking wine into the carboy - can I just pour with a funnel if I'm careful, or will that cause problems? This is my first batch....... I'm also contemplating about the size of the batch - it's only about 2 gallons, so I'd have to put it in two...
