    Most of the true brews have a seal in the lid so that it is air tight.

    I think he was referring the the o-ring that seals the lid to the bucket. I would use a airlock brush to clean the crud off. You can find one at the LHBS.

    well if you use it: 1. Make sure and use fresh water (they reuse the same water for washing) 2. I wouldn't use the cleaner that is used for dishes (b/c it might not fully rinse out of the bottle) 3. The 180 water is good, but starsan soak is better IMHO All in all I wouldn't recommend it...

    If you have a dish washer run the bottles through a cycle without dish soap. See if that takes the smell out. +1 on investing on starsan, its great stuff and cheap.

    as other have stated: 1. Doesnt matter b/c co2 fills the head space. 2. try HO3 (hydrogen Peroxide) and baking soda mixed together and use a soft scrubber. 3. Longer time in the primary is always a good thing. I keep mine in for a 3 week minimum.

    What yeast was provided with the kit? The best advice I have is to let it mellow for a few weeks and see if the taste improves. Time is your friend with harsh tastes. It may never fade away...but it is better to try then dump.

    That is within reason. I would not be concerned unless it dropped below 1.010. Just let it mellow in the fermenter for another week and check your gravity again. If it is unchanged, bottle it up. EDIT: Even if it does drop below 1.010 that doesn't mean anything is wrong (i.e.: infection), it...

    What was you estimated OG and FG? Where are your numbers in comparison?

    Try to cold crash the fermenter. Get it around 35 degrees for 4 days. That should cause everything to settle out.

    Can you provide the ingredients (hops and adjuncts) and when you added them to the boil (how long they were boiled)?

    What was the OG of your starter? Do you think this might have thrown off your numbers? A gallon sized starter could have skewed your numbers if its OG was high IMO.

    +1 on the oxyclean. I use a scoop and hot water. Soak it overnight and rinse in the morning. Takes all the crud off without scrubbing.
