    @seigex...what did you do to push yours up to 14%? Mine was 1 gal apple cider, 1/8 tsp. Lalvin yeast and 1/4 C. Dark brown sugar dissolved in 1/2 C. Boiled water. I like the flavor a lot but would like to boost the abv...would just increasing the sugar on the primary ferment do it or do I need...

    It isn't beer, I'll grant you, but I'm drinking a crisp little hard cider I just got through bottling...lalvin EC 1118 produced it....sorry, you guys kinda intimidate me with the very specific names for your beers ;-)

    I am already shopping for my very first kit for beer. I am stuck between American Ale and Galaxy Extra Pale. Any tips for me on either of these or other suggestions on what sort would be a good starting point for a raw newbie?

    Broken airlock

    Now I know why airlocks are so cheap...just broke my first one. I suspect that's a regular hazard. Any tips on how to avoid that when removing the airlock from the stopper during cleanup? I'm using the basic plastic 3-piece jobs.

    3rd batch, lalvin EC 1118

    Just bottled my 3rd cider batch and I must say the flavor is lovely. Ended up 6.41% abv and I am very pleased. I believe I have found my perfect cider yeast. My next trials will concentrate on increasing the alcohol content, but I could drink this all day. Can't say how pleased I am!

    Why did you get into this hobby?

    Yeah, Herriot did mention some very tasty-sounding beers. I always liked the bit when the guys are deciding where to go to celebrate the new baby and Tristan is cataloging the different pubs according to the flavor of their beer. Makes me want to do a crawl and try them all, lol.
