3.3 CF seems pretty small to be fitting a corny keg. Does the fridge have a freezer at the top that has the cooling lines running through it? If so, that might limit the height to less than what the specs say.

Yes, if you use the AC/USB adapter. On batteries they shut off after about a minute, then re-tare to zero if the weight is still on it. It's funny one scale says 90 lb and one says 60, but they are the same model number and identical. About $21 on Amazon

I put these 90lb low profile postal scales under my kegs in my mini-fridge/kegerator.

It depends on the type of probe. if it's an rtd, then the wire type isn't critical as long as all three conductors are same length/gauge. If it's a thermocouple it needs to be the appropriate wire material for the type of thermocouple.
