    My bag of hops look like a smack pack, why?

    Was it like that when you bought it, or did it happen since? The former wouldn't worry me, I've had leaf hops puffed out like that. If the latter, I'd be concerned what was causing it to inflate.

    Mr Beer...

    I did worry a bit about boiling the HME, but since I was adding fresh hops, not too much. I've had mixed results adding DME/LME at flameout, so I went ahead and boiled it. When all is said and done, I have about $12 in this project, so I'm not too stressed. ;)

    Add some DME instead of the Alcohol booster packet, which I believe is just corn sugar. Second the steeped grains and hops. Fresh yeast is probably not a bad idea. The little two gallon fermenter and PET bottles should be great for cider and the corn sugar too, or maybe just use it for bottling.

    I do 1 gallon batches in glass jugs as experiments or to dial in a recipes, sometimes as many as 3 variations at a time. But I do 5 gallons to "fire for effect" on proven recipes. I try not to experiment with 5 gallons worth of ingredients' +1 on yeast washing bringing down the cost of small...

    Black Fungus Ale

    H-mart has all kinds of interesting grains and cereals, so wheat and oats are a possibility. Not sure if less yeast would help, would probably just slow things down. I might also carmelize some of the wort separately to create unfermentables, then add it back to the main wort. All good ideas.

    First brewing experience( fail?)

    The late malt addition should be just fine, lots of brewers do that on purpose to avoid caramelizing the sugar. If your wort was too warm, you may have killed your yeast, shouldn't happen at 85 though. If nothing happens in a day or so, repitch with fresh yeast. You'll be fine.
