    it's often not about skill... its a matter of near impossibility. A brewer in NY brews a great beer and a brewer in CA trys said beer and wants to clone it (Heck someone from across the county).     Mistakenly ordered 20lb of unmalted wheat

    Couldn't you just mash as regular but add a good amount of amylase? I mean I have don't that with potatoes to force conversion...? not sure on this but figured it probably would work?

    look at the forum for DIY projects... They have plenty of examples of people who have done the same of similar. ANd, IMO if you are spending 2300 on a stand, I'd look at going electric.

    Don't worry about it. let it do it's thing, then take a gravity reading in a couple weeks. if it's a bit high, let the temp get hot again in there and see if it drops the grav a bit. Relax, have a home brew :-)
