    So, I brewed a batch of Sweetwater clone...primary for 21 days and secondary for 7 days. Then it was chilled for 3 days @ 35 in my fridge and has been on 12 psi of gas for 7 days. On day 5 it tasted great and was carbed up nicely... so I had a couple of pints. I thought I would have a pint...

    That sucks....be glad it didn't cut a limb of though. I am in Knoxville and have a 5 gallon glass carboy for free if you need it.

    American IPA Bell's Two Hearted Ale Clone (close as they come)

    I really want to try this for my next brew and have an excess of cascade....do you think I can get away with using cascade for the 60 min addition without really messing up the overall flavor?

    I finally decided to try to clone my first beer. I am still new to all grain brewing so any help is greatly appreciated. I took a look at Highland's web site and the Oatmeal Porter is listed at 32 IBU's with Chinook, Cascade and Willamette hops and 5.8% abv. So, Here is my first rough draft...
