They generally aren't made to hold that kind of pressure. That's why a winemaker will put an airlock on barrels when a nearby barrel is going through malolactic, just in case the culture kicks off in its neighbor. The resulting pressure in a stoppered barrel can be quite a mess.

I just racked this one last night, so far so good. Still has more of a beer/yeast smell than anything pumpkin, but is still finishing fermenting. Color is a beautiful dark amber, has a lot of promise. Hoping this will be ready to drink by Halloween!
I just brewed this last night, kept to the directions, but after reading the feedback on their site, added and extra tsp of pumpkin pie spice at flameout. Looks good, smells great so far, fingers crossed.

shhhh...don't tell the secret, but that is what most wineries and breweries do as far as the bottles they have out on display showing medals won, etc. The display bottles are filled with water and re-capped/re-corked. Sitting out on display is a recipe for something getting broken somewhere...
