    buying my equipment

    Any combination of fermenter, bottling bucket and hydrometer will work. Assuming you have a boil pot and you are going to make beer from extract to start. You will also eventually need a bottle capper and bottles and don't forget to buy some sanitizer like star-san. I bought most of my equipment...

    No fermentation?!?

    I had a beer not ferment for a week once, it was genuinely my fault of course but it can happen... It's the only batch I have ever had that happen to, but its certainly not impossible... And I ended up having to toss due to an infection that made it sour and made me nearly vomit when I tasted...

    Check for odd smells though, leaving wort unfermented can lead to funky bacterial infections that will ruin your beer

    over fermenting???

    Generally a heavy RIS will take that long at least, it can't really over-ferment, the yeast will consume sugars until there are no more left. Generally your LHBS will have bottles and caps, or order caps and start drinking beer with reusable bottles(what I did), your beer will be fine for now...

    I only formulate my own recipes, when I use someone else's, it never comes out as good to me, I have a couple of books and the web as a reference.

    That's basically how I use my carboys, dry hopping, fruit, wood... Etc, sometimes I will secondary a messy trub brew just to make yeast harvesting easier

    Old Ale Old Bastard Old Ale

    Nothing more than a week or two, the chocolate malt wasnt too prevalent, it provides a nice flavor balance with the crystal, I am going to do this one again in a couple batches.

    Ok, due to some family obligations, I finally got around to brewing another batch, this time I ran a batch of stout @ 65%, my OG should have been 1.068 it ended up at 1.087 which is roughly 81%, I couldn't be any happier, I will continue to post as I brew
