    Apologies, another question. The deterioration you mention, is that more pornounced in warm storage, which I understand being the pimary environment of bottle conditioning, or cold as well and if cold as well I assume at a different rate ?

    That is about where I am (~2 months), so seems to fit your experience. Just curious, when you say "sweet spot" I take that as after that range things can go badly ... ? Would this generally be the oxidation concern ? Or some other degradation or combination ?

    Well breaking from any sampling schedule at all and not having any other beer on hand, put 2 in fridge. Tried on 10/7 PM, really starting to believe has mellowed some since beginning. Early on in bottling, drinking one was actually difficult to finish first but this time no issue moving onto...

    Well, at the moment sticking with the wait game, while slowly drinking them, mostly for sampling. As of 10/5 sampling (I believe 7 weeks in bottle, 3 weeks since last sampling ... took longer than I thought) maybe slightly mellowed. Not tasting anything off, so hoping/assuming no oxidation...

    Update: Had first tasting at 2 weeks last night. Definitely still very bitter. I have tasted beers in that area of bitterness, just was not the intent for this one. Sticking with original plan of keep in conditioning for some more time. Not sure if will go with tasting at every week at this...

    Ha, yep, thanks, and the cooler the better on these for sure. Add the nearly 6% and should be going down smoothly in no time !     Just updating to serve as a log. Bottled as expected a couple days ago. Still obviously has the bitterness but I have to say it is drinkable, so with that, still hoping for mellowing out. Not to mention it was warm as opposed to refrigerator-cooled.

    Makes sense, thanks. Going to focus on bottle ageing and blend at serve if needed. It was certainly drinkable, for me, and if it mellows at all I think will be fine. If anyone cares, I will try to provide feedback at scheduled tastings. Obviously subjective, but data.

    So adding on, I just read a suggestion on another thread that possibly dry hopping might address extra bitterness, is that valid ? I have some Centennial hops in the fridge because I was concerned might not get the Magnum for brewing day.
