    You can ferment them with the wild yeast, I don't think you will get as high an alcohol content, but it will work. I have had good results pasteurizing my must instead of boiling, put the must in a big pot, the put that pot into a bigger one with water in it, heat must up to 170 and keep it...

    Juice soaked rice is complete fail, very bad smell (alcohol + BO and spoiled milk) , black spots on top, after 3 days.

    BTW on a side note, if you have a hard time finding sealing wax I make my own, it is really simple 1 part hot glue stick 2 parts crayon, put in a can and melt in hot water, mix together and walah sealing wax. Works a lot easier if you cut up the glue and crayon

    I usually waxed right after bottling, I don't claim to know a lot about it but I've never heard of the wine breathing thru the cork.

    I'd say not a good ideal you would infuse a lot of oxygen into the wine pouring it back into the DJ and I would say it wouldn't save very well after that, but I have never tried it so I'm not positive.

    Yes, the plain version was soaked in water and the other in juice, I had planed to just soak for an hour but got distracted and ended up soaking overnight. Then both were steam cooked.

    Seriously, I got lazy this year and didn't go pick any berries, looking at the pics of your wine has me really regretting my laziness!!!!!! I have 1 bottle of 2yr old BB wine left, I was saving it for Christmas, but I might have to break it out and enjoy tonight.

    Dry Concord Wine

    Yeah, I accidently ended up with 2 vines of concord (got screwed online purchase) and make a pretty nice young drinking wine every year out of the grapes, and I'm not sure why but store bought juice looses something that the fresh crushed juice has in taste.

    How long will yeast keep?

    You should be good, if your iffy on it, make a starter must and see if the yeast takes off, that way if its not so good you really haven't lost anything.

    Well regular batch has a little liquid in the bottom already, the pineapple batch has close to twice as much liquid, hum I wonder if the juice helped break down the rice faster? I will post further when I check up on it next week.

    A friend tried to make a batch of homemade Vodka, well it turned out to be the worse 2 gallons of 145 proof garbage I have ever spit out, so I am wondering if I could use this very high octane swill to sanitize my equipment or if I should just kill some grass with it?

    O how I love blackberry wine, I would highly recommend campden tablets especially if you started with wild Berries. When I first started making BB wine I would get a lot of vinegar until I started using campden then no more problems.

    I always pasteurize after bottling, kills any left over yeast and any other bad things the wine might have picked up.

    Started 2 batches today, the first one I followed the basic recipe, in the second I soaked the rice in pineapple juice overnight just for giggles and to see what would happen.

    thanks, I live in a very small town and the closest place that might have a Chinese market is about 1.5 hrs away so online is my best choice for getting brewing supplies. I got 4 Shanghai Yeast Balls from a seller named forestseller1, I looked at a lot of listing and his seemed to be the best deal.

    OK, after reading about half this post I am sold lol. I have my yeast balls ordered from E-bay and bought a bag of jasmine rice this morning. I gave $4.50 for 4 balls shipping included, if anyone knows of a cheaper online place to buy them let me know please.

    Anyone else get the Gottacheckits with a new brew? I find myself wanting to go check the fermenter every 30 mins every time I start a new batch it's like an obsession I don't have to touch anything but I must go peek at it at least 10 times a day for the first 3/4 days lol Anyone else?
