    Do you have a friend that homebrews? Is there a homebrew club in your area? I recommend brewing with another brewer and observe their brewing techniques, even if they are brewing all grain. Post an ad on craigslist if you need to, there are a lot of us who are willing to help out a fellow brewer.

    kettle size

    I use a 60 quart kettle for brew in a bag (BIAB), with total volume up to about 8-8.5 gallons. It's a little overkill for 5.5 gallon batches, but I don't really have to worry about boil overs. Plus, I have the capacity (at least for smaller grain bills) to do 11 gallon batches.

    BIAB no mash out

    I find that when I use a grain bill over 9 or 10 pounds for a five gallon batch, my efficiency goes down and I need to mash out, but that may be just me.

    When I get my wort to a boil, I turn it almost all the way down and it still keeps it to a boil. I get about five batches per tank.

    First AG BIAB batch

    My third BIAB was a Founder's Porter clone, which was something like a 13 pound grain bill. As long as it fits in your bag and pot, you should be fine. You can download a trial of beersmith if you want to play around with the software first.

    Newb from L.A. pulling the trigger on a kit today

    I recommend waiting three weeks. Saying that, the first batch I made I couldn't wait and bottled after two weeks and it ended up tasting just fine. The hardest part to learn for me was to be patient. Have fun experimenting and let us know how it turns out!

    A second fermentor is nice if you want to have two batches fermenting at a time. If you do that you might want a bottling bucket. Get some Star San and a bottle capper. And welcome!
