    Got my starter of Wyeast 1728 going last night. Gonna try to take some pics and post along the way for this batch. Starter consisted of 4 cups water to 3oz DME...which ended up as about a 700 ml starter (after evap). Also added a pinch of yeast nutrients. It was churning away as of this morning...

    Williams Brewing Watermelon Ale

    Update: After 2 1/2 weeks in the bottle, it's still pretty green with artificial watermelon flavoring. Gonna give it a couple more weeks....and probably just use real watermelon next time even though it will be a lot more work. The extract doesn't even really taste like watermelon yet.

    I'm getting pumped to brew this one up. Target brew date is July 23rd and I'll update at that time. I plan on using the ABV bump and soaking the chips in port....and possibly adding a vanilla bean or two...but not sure I want to create too many flavors with the 1st batch. Can't wait!

    Looking for an IPA recipe with some "dank"

    Just sampled this ^^ over the weekend at 1 week in the bottle and I think I found a name for it. Enamel Stripper. Holy F'ing Cow this is a danky beer. I ended up dry hopping the extra Citra and Summit and the aroma can be smelled by the neighbors. Still pretty green and needs to mellow a bit...

    Thanks for the follow up Jsmith. You just used the apricots in the secondary, right? 2 weeks? Does the puree just hang out at the bottom? Or does it absorb fully into the beer? (Never used it before)

    Thanks guys, I think this may be the one to get. Plus, it will have plenty of time to age for the colder months ahead. I wonder if a little vanilla would be over the top in the dessert department (love vanilla porters).

    Bringing this thread back to life.... Any updates on how more bottle conditioning treated your pecan porters? I've got a brew weekend coming up in July and this kit is on the short list. I was also wondering how soaking the oak in port would taste?

    So, any follow up on this one? Did the tartness mellow out? I'm looking for a good apricot ale recipe to try soon and would like to try and either clone Aprihop or Dry Dock's Apricot Ale.

    I've only been to about 4 or 5 of em here, but I too, like The Brew Hut and Stomp the best. And as Nateo mentions, Dry Dock brewing is awesome. Make it a point to get out to Aurora sometime and try em out. They have a delicious Apricot Ale and IIPA.

    Well, I wasn't able to put any in the secondary before bottling day due to scheduling, so I just ended up putting about 3 out of the 4 ounces in the bottling bucket. I took it to the point where I thought it was a tad bit strong since I've heard the flavoring mellows a bit after 2 to 3 weeks...

    Thanks for the reply's. I think I'm going to toss in an ounce tonight when I take a reading from the fermentor, then add 2 oz. at bottling and taste it to see if that's too much and add the rest if I need it. I've heard that sometimes the watermelon can be over powering at first, but mellows...
