    As suggested in the other thread, substituting table sugar (or invert) for some of the liquid malt extract will keep the OG similar, but should be more fermentable resulting in lower FG. So, less sweet and more alcohol. Try substituting .5 to 1.5 lb sugar for LME.

    DME Hardening

    I bought some of these mylar bags to store DME. https://smile.amazon.com/gp/product/B01IWRCPOG Each will hold ~5lbs. I then stored those bags in a Vittles Vault. I never had a problem with DME getting hard. Keep in mind that I live in a semi-arid climate also. :)

    I'm definitely spoiled with a good selection of LHBS in my area. The 2 that closed were ~15 minutes away. They both had good selections of grains, yeast, and equipment. There is another great shop ~20 minutes away, and a couple more within ~30 minutes. So, there is competition in the area...

    2 LHBS stores in my area have closed this month. There are others in my metro area, but it is sad to see them closing. I'm not a large volume or frequent brewer, so I know I didn't do much to contribute to their business. I did enjoy interacting with the employees when I was in the shops...

    I'm thankful that my family fully supports my homebrewing hobby. My son brews with me and buys homebrewing gifts for me (hops, dry hop tube, ...). My wife encouraged me to get back into brewing after a ~20 year hiatus. She purchased my gas burner and my first corny keg!
