    I found a few apiaries in MD, and it appears I may be able to pick up their honey from stores. Since I am only planning a 2 gallon batch, I am hoping it won't cost too much.

    I don't want to bother racking to secondary. What is the longest time I can keep the mead on the yeast cake? I'd like to drink my mead this year, but I won't mind letting it ferment and then age in bottles for a few months. I am planning to look for an apiary in Maryland and get some honey soon.

    For the first time I have krausen coming out of the airlock. I'd like to pull it out and put on a blow-off tube, but will my beer paint the ceiling if I do so? How do I safely release the pressure (if there's any)?

    @Firebat138, after some searching, some people say to do your primary in a bucket, but your secondary in a carboy. They say carboy, because it will minimize the headspace, and glass because it will keep the oxygen out. I am still skeptical about the oxygen issue.

    When I did my third batch, i kinda missed seeing the krausen rise, but i got over it. No, my bucket doesn't have a spigot, I will just syphon.

    I am fermenting my 3rd brew in a bucket, and I wondering if there are any downsides to it. So far, the only thing I dislike about it is that I can't see my beer inside, but besides that it's easier to carry, it's cheaper and it's easier to clean.

    How long does your krausen usually take to fall into the beer?

    The recipe calls for 2 week primary, 2 week secondary. I was planning on skipping the secondary, and letting the bear clear in the primary. How would I know it's ready to be bottled? The OG was 1.052, so I am sure my SG will stabilize by next week.
