    To the OP: I recently brewed a BYO recipe for porter which called for WLP001 (but I didn't really pay attention to that one and used WLP002)... It came out great with WLP002, probably just as good if not better with 001.

    I only brew in a secondary. It could take up to a month. Primaries aren't really necessary.

    Sounds pretty good! However, I would substitute the honey with more base malt.. it will taste sweeter that way. Are you really going to fly sparge that? I use an unconverted 5 gallon cooler with paint strainer bag for my 3 gallon batches with great success.

    In my experience, low Alcohol By Volume beer doesn't necessarily taste bad, and you can drink more of it without getting wiped out... Lovely session beer. Keep an open mind. Keep notes on your process and learn from your success and mistakes.

    I use google docs (ahem, drive) for keeping recipes, notes, and schedules.

    Is all grain cheaper than malt?

    I only do all grain but that's cause I'm fancy. It takes hours more in your brew day and it takes a lot more work, learning, and equipment to do all grain. Still, I won't go back to extract and I'm still learning how to mash after 20 batches or so. Yep, fancy.

    Maybe your sample wasn't representative of the wort? How did you extract the sample? Did you take a sample after boil?
