    Rootstock?

I would recommend talking to one of your local wineries, they know what the next up and coming grapes are going to be. They will tell you about anything you need to know. I live in Nebraska, and we have French American Hybrids that we make wine out of. If the winery grows grapes they will know...

What would I use for a mash tun?

I agree with you on going nutz from the start. I am in the same boat as you; I want to start a brewery someday, so I’ve bought things way larger than I really need. I am going to build a MLT with a false bottom and a 9000w rims system to hold temp, and just insulate the thing with some...

    My Electric conversion (Brewmation)

It would take 6 mins to bring to a boil from 168 @ 5500W. From 50-158 would take 15 mins

    My electric brewery build

I dont have a GFI at home. Do i really need one? I am not sure, but i think they are expensive. I just started my wiring, and am confused. I have my 240 4 prong plug coming into my box, from that i have the red and black going to my SSR then a single black coming off the ssr to the heater...

    My electric brewery build

I am a little bit confused by this, my element only has 2 prongs. Do i just hook up red and black and my ground to the element? what about the white? Sorry for the stupid questions. where my thoughts on hooking up the pump correct? I dont know too much about electrical.

    My electric brewery build

Its 35 amps, and i will be running 4500w element, and my pump which will be fine. I just dont know how to wire it up. To the pump would be Black White Green? and to the element Black Red combined going to Black on the element, White to White, and Green to ground? Good to know i got both, better...

    My electric brewery build

I have a 4 prong outlet at home, do you guys know how to convert a 4 prong outlet into 3? or just wire it up somehow to only use 3 wires, and not 4? Also is there any way to run a 120v pump off 220v, or convert it somehow?

    240v Switch Options

Your method looks good, dose it work good manually switching that much power I will be switching 2 4500W heaters. I would normally be on auto, but want the capability to turn them off if i need to turn off a pump or something.

    240v Switch Options

Ive got the same question on this one. I was thinking of not breaking the leg on the 240V but instead breaking the leg on the low voltage coming into the ssr. That way i dont melt the switch together throwing that much power around, and low voltage switches are cheaper. Just got some of my parts...

Totally Depends on Pumps, and volume you will be dealing with. But if you can definitely go bigger i would u can always grow into it.

    tannin conversion?

You can also get some tannins from the skins, and seeds, but be careful how long you macerate. I added hot water to the skins and seeds, to try and pull out more sugar before i pressed them, and found out that it just pulled out a lot of tannin.

    using Potassium sorbate

You can definitely taste sorbate in a wine! If you can Sterile filter the wine you wont have any issues with refirmentation. But if you cant i would add sorbate if you are making a sweet wine. If you are bottling dry wine do not sorbate it. I would add some sulfite, there is free So2 and Total...

    Grape picking timing issue

Ya there are a lot of wine making grapes out there that can not get over 20 brix. Its a little late to do this, but i would run a extended massoraiton on them. Add some so2 and let them sit in the refridge for about 3 weeks warm them up to pitching temp and throw in your yeast. keep all the...

    fizzy wine?

I work at a winery, and i would say to do what the last guy said. Just give it some time, and warmer temp. How long was fermentation? and how long have you had it?

    tannin conversion?

Personally i dont even mess with the tannin in plum wine, i like the fruit to shine. A lot of tannin powder is made from oak. So you could just add some oak to it if you are going for that sort of thing

    Big batch Wort/Brewery Pump help

Hey when you get the pump let me know how it works, i am slowly building up towards making 50 gallon batches, and will definitely need a big pump. I just ordered parts to make a 9000W RIMS system that i will use for heating throughout the brew.

I can't leave well enough alone.

So with this rig you will be able to add water, grain, and just walk away until you have to add hops? I might have some questions for you about how you hook it up to your computer, when you get done, we have a controller thing that converts 482 to RS 283, but i dont know how to hook it up yet.

    Nano Brewery Build

I would just jump down to 6 micron for my first filter. When i filter i usually go 6, 3, 1, and if you want to go sterile below .65, but you only need to do that if you are bottling. If you get a Cartage filter, for a house, you will need double open end, and can find them at gw kent. The great...
