    +1 on chapman buckets as being fairly priced. They are very easy to modify for any upgrades. Here are some minor evolutionary pics of one of my chappys.

    With a 50 ft coil what ever the wort temp is, it is coming out at the hlt temp.

    I leave mine on for the entire boil. I run electric and have seen zero issues. No melting at all.

    I just made a pale ale with crystal pellet hops from 2015, tasted just fine. I must have gotten lucky because they were not vacuum sealed or refrigerated and had been in a tool box that was shipped over the Pacific and back. I was worried it would suck too!

    You will be fine. I routinely mash overnight. Set controller and recirculation pump up at night and finish the next morning

    You can find the parts on Amazon and Ebay. They are cool for bringing brew to and fro, but I would get a normal keg to carb and transfer into these.

    In theory it sound like it could work to some degree. The one thing I can see being an issue is how well the sous vide heater can circulate the water jacket.
