You want the lid off at least partway - you don't want the water that forms on the underside of the lid to drip back into the pot - you'll get nasty tastes from that. Letting the steam escape will keep that from happening.
You might be fine..... but you might not get a full ferment. I'd wait and see since it seems to have started. Give it a few days (7 to 10) then maybe check the gravity again and see what you've got.

is the .15 qt per lb of water absorption by grain something of a 'known constant', or does that tend to vary based on the grains used, i.e. flaked, or the type of grind, etc?
Got my first all grain brew in the fermenter last night. The mash and sparge went exactly to plan, and i hit all the numbers! Very happy! I did a Left Hand Milk Stout Clone, the OG is 1.062. Can't wait for the next 6 weeks or so to pass to try it out!
Be sure to let us know how it goes - i'm planning to do something with lemon zest for a summer brew (kinda like the Sam Adams summer brew), and have been wondering how to best incorporate the lemon. Sounds like you've got a good plan here.
I'd suggest adding a swipe or two to each bottle with a bottle brush next time to be sure you knock any remaining ever so small solids off the sides, then do the sanitizing rinses. you can never be too carefull there.

Why am i having a hard time finding CACO3 in LHBS? Is it labeled as something else and I'm not realizing this? Or do people generally not use it at all? I can find CACL and MGSO, but not CACO3....

I just bottled a "Hoppy 420" brew, based on initial taste test it should have a not too bitter and nicely rounded out hoppiness. Somewhere aound a 10 SRM.
Planning to do a Lefthand Milk Stout Clone next.
