    GROUP BREW: Strawberry Mead

Interesting. I've heard of people doing that but never described as a necessity or with such a specific timeline. I've just been whipping it up for a few minutes once a day for ~3 days with a lees stirrer with good results, but I'll give this a go on my next batch. What is the logic...

Ok. How long is good to wait until putting on the airlock?

    Too Much Honey?

You'd probably be best off boiling some water, letting it cool to ~75 degrees, and adding it asap.

    Too Much Honey?

That is going to be A LOT of honey for bread yeast. Do you have headspace for more water? Keep it warm. ~75 degrees.

    Cherry Melomel started

That looks awesome! I'm feeling inspired. When you rack to secondary and add cherries, do you sulfite?

I forgot to post my log, so here goes... 1/21 18lbs clover honey 17lbs frozen strawberries (mostly thawed) 3.25 gallons filtered tap water (to 6.5 gallons in carboy) 3 campden tablets crushed OG 1.138 1/22 2 tsp CaCO3 (to get pH from 3.3 to 3.9) 1 tsp (~4g) Fermaid K 1 tsp (~4g)...

    GROUP BREW: Strawberry Mead

I added some more Ferm K and DAP today (day3), then stirred. About 3 seconds into stirring, my carboy turned into Old Faithful. I just stared in awe for a few seconds then grabbed the blow-off tube. It's still going. Strawberry is everywhere! :drunk:

Yeah. After 2 consecutive mornings of waking up to an airlock 5ft from the fermenter and stawberry sludge all over the place, I'm changing to a blow-off tube. :cross: Yeah. It was about the same for me.

    GROUP BREW: Strawberry Mead

I just mixed it up really well. Got the strawberries and everything pretty well mixed and an OG of 1.138. Then I mixed it up again and got an OG of 1.115. Do you guys typically have trouble getting good OG readings with this much fruit floating around and dissolving in primary? I...

    Rack, Bottle, or wait?

If you are using champagne yeast, it could still be working. I'd give it another week and check SG. If it's the same, rack to secondary and wait for it to clear, then bottle.

    GROUP BREW: Strawberry Mead

So I had some time last night and decided to get started early. I have a few questions: 1. After adding 17 lbs of strawberries (just shy of 2 gallons in my carboy), there was the 18 lbs of honey (1.5 gallons), leaving space for only 3.25 gallons of water. Is that enough water? Seems like A...

Just got 17lbs of frozen strawberries from Kroger. It was almost $40!!! SWMBO was less than impressed, but I assured her it would be worth it.

    Mead - Walmart Clover Honey?

I've got a few jars of the Wal-Mart honey, but I haven't had a chance to use them, yet. At $7.50 for a 3-pound jar, it's hard to say no. Definitely worth it for a few experimental batches at least.

    GROUP BREW: Strawberry Mead

:mug: Cool. Thanks. I'm familiar with aerating. I use a lees stirrer in a cordless drill. But this will be my first rodeo with solid fruit (other than JOAM), so that is helpful info. :D

Sounds good. But can you please explain this line? I can get some wildflower inside of a week, but I have a lot of clover already. Do you think that would work well instead?

This sounds great. I'm in. I've got to find some wildflower honey!
