    A friend recommended that I just add a few tablespoons of honey (to avoid some off flavors from processed sugars?) to up the alcohol level a bit. Anybody done this?

    2oz is what I thought I remembered hearing before as well. Thanks, I'll give that a try! BTW- Did you just dump it in, or did you "teabag" it into the boil? Curious because zesting a fruit leaves pretty fine remnants and don't want that to transfer in when I rack to my bottling bucket.

    Sounds good. Just a heads up too, most of the owners/brewers in the area are cool enough that if you have a way of getting it back with you, and are there at the right time, will have no problem giving you a tube of their yeast as well.

    Same here. Since you're adding your brew to the solution you've created with the priming sugar it starts mixing in to the new solution immediately.
