    8 OZ total Cocoa, 4 primary, 4 secondary, you could probably drop in 8 at the end of boil if you dont want to secondary. The cocoa extract is pretty strong, the flavor is never super chocolatey, but the aroma is pretty intense.

    Kolsch yeast cake

    I have used Kolsch yeast for a big Wee Heavy, a decent size cake ensures your not underpitching. I have also used it for APA, which definatly show off the hops.

    750ml Unibroue bottles

    I use plastic champagne corks, a rubber mallet, and cages and they work well for me, I cant advise on using standard corks, except the cages will not fit properly.

    Im with this guy... Try a clamp on the hose fed by your racking cane, Aerating at bottling or racking is horrible on the beer and a 25cent clamp will make it all better.

    I think if you look into it moving to a secondary is considered unneccasary and most conclude that a long primary is better for the beer.     Beer Glass Temps

    I dont like chilled glasses, especially frozen ones as the frost waters the beer down... and I dont like beer that cold anyway. I am a believer and a preacher that ales should be served cool, not cold.
