    I could have written every word of what you wrote above. Your experiences and mine are uncannily similar. Gonna start this winter's batches right after Christmas. I have a melomel, a sack mead, and a cyser in the planning stage this year.

    Two statements ... Streaming works great, My wife's work (from home) is a challenge sometimes. I think it is mostly a latency problem for her.

    I don't know. But I came here to say that my first attempt at mead was a (fresh) elderberry melomel, which was amazing. I hope yours turns out great as well.

    I do most of my brewing in the winter, when the back bathroom stays pretty cool, generally 58-64 range. That works very well with my go-to yeast, K1V-1116. We have no airconditioning, so when I brew in the summer, I put my carboy/bucket in the bathtub with water in it, to keep the temperature...

    I'd leave them another week, to let them settle as much as possible, and to let the yeasts "clean up" before racking. But, either way is likely fine.

    If your SG reading is right, don't add any more nutrients! It would be useless to the yeast, and maybe tasted in the final product.

    Airlock popped off my 1 gallon carboy…

    Has anyone added honey instead of priming sugar to mead

    So, one day between priming and checking for carbonation, if I understand correctly? I think the expected time is normally measured in days or weeks. I am new at bottle conditioning, but my current test took 10 days before I knew for sure it was really happening.

    I started with the same kit, and it turned out quite good. A few years later, still making and enjoying mead!
