    How do you bottle a saison for competition?!?!?!?

    Go buy an Affligem Blonde six pack. Those bottles are thicker than you average bottle and can probably handle more pressure. Also the labels come off with just a hot water soak. You could also try Duvel bottles. Not longnecks, but worth a shot.

    No way you could get all the small particles out with the strainer in your kettle. Use a grain bag next time. FWIW, your beer will probably be fine.

    When I use dry yeast (which is not often), I boil said water in my flask, cool and then sprinkle the yeast. I let sit, with no shaking or stirring, for about a half hour before pitching. Which, interestingly enough, is my gelatin regimen. Boil, cool to 150, sprinkle, let sit, pitch.

    Generally, my beer ends up just as clear if I don't use gelatin, it just takes a lot longer. Often weeks longer.
