    I'll second Rish's suggestion: Brewer's Best Peanut Butter Flavor extract, at 4 ounces per 5 gallons beer (a fairly simple 6% abv, 30 ibu, american stout) turned out really nice, I just added it straight to the bottling bucket.

    Not really, to be honest. But SOMETHING unique to your use of chestnuts is causing your beer to start refermenting in the bottle. How are you grinding the nuts? Maybe you're leaving chunks that are too big for the subsequent mash/boil to completely denature?

    You could try making an extract: maybe roast them on an open fire 🎅 in your oven to be sure there's no enzymes left in the nuts, then grind them up and soak them in vodka for a few weeks, then add the extract at bottling time.

    Just timed it, after my 60 minute boil, i killed the heat, removed the reflectix insulation, dumped in a whole 3 lb bag of Briess Golden Light DME, and replaced the lid, without trying to stir at all.     What I did for beer today

    Bottled 2.7 gallons of Yooper's Oatmeal Stout (tastes delicious already), gonna dump a 1.095 beer on top of the yeast cake, soon as I get it boiled and cooled.

    Newcastle Nut Brown ale, gifted from my sales-lady... Haven't had one in at least 18 years, and this bottle (Brewed in either Petaluma CA or Chicago IL) tastes nothing like I remember. No bitterness, no hops, just mildly sweet bilge water. Dumped :confused:
