    Centenial Belgian IPA

I'm super psyched about Belgian IPA's. After experiencing a few (Houblon Chouffe etc!) I'm convinced that Belgian IPA is the next big style. Harpoon is throwing BPA as their newest year-round brew, and I just saw Ommegang released one (too pricey for my blood atm unfortunately). I've got a...

Brewers Best California Imperial Pale Ale

This kit is really good. Mine was bottled 10/14/09 and it has always been a very good beer but has improved greatly with age and I will likely not go near my remaining bottles for quite some time. It may be worth using more hops than the recipe includes.

    Russian Imperial Stout... delayed fermentation

I wanted to bump this because I've now tasted 2 12'ers of these! Thanks y'all for your suggestions! I ended up using a dash of liquid irish ale yeast at bottling. Tasting now after 12 days in the bottle: The beer was definitely fully fermented and the alcohol does come through relatively...

    Russian Imperial Stout... delayed fermentation

Hey everyone - I just returned from 6 weeks on tour, having left my russian imperial stout in the basement since 5/13. After a week, I was able to check on it and saw no sign of activity. I was puzzled but saw no course of action but to leave and let time happen. I was able to look again...
