    Man, I love Apfelwein

    How old was it on March 8th? I first sampled mine at about 6 weeks and it was incredibly dry with very little apple flavor. Now, at ~4 months, it has a much different (and better) flavor. Don't dump it; put it in the back of the closet and forget about it for a while.

    Yeah, I was more impressed than anything else. I was convinced I had plenty of space, but the yeasties had a different idea. There's nothing better that a violent fermentation. :rockin: (though I better check it again before I go to bed)

    Adding yeast nutrient will quell the rhino farts. SWMBO (who knows nothing about brewing, etc.) made sure to ask if I put "that nutrient stuff" in the apfelwein before I put the carboy in the pantry today.

    Yes, still all grain. I lean toward hoppy ales, especially IPAs, but my next brew will be a Belgian Wit, and the current keg (and last, until I brew some more) is a Heffe. I have a jury rigged setup with a cooler mash tun with a PVC manifold. Three-tier, gravity, using whatever is available...
