    First Recipe, need critiques

Rice hulls are your friend with wheat, just saying. Otherwise, interesting idea. I'd use Melanoiden instead of the chocolate if you are looking for a red color. Cheers, Kef

    Daywalker Red Ale

Tease. :P Seriously though, that sounds like a pretty cool recipe, although you may end up with less aroma/flavor that expected with only one late addition. Then again, it might be amazing. *shrug*

AleSmith IPA w/ San Diego yeast

You'll be fine, that starter will tear through it pretty quick.

Why is my bitter not bitter?

Only one late addition would be my guess, even though the 5 minute addition is a large charge of them. I'd do 1.25 each at 15 minutes and 5 minutes, should help perceived bitterness and would probably help the aroma and flavor out. Possibly do a 1oz dry hop for a week as well, if the 15/5...

    Citra/Galaxy Brett IPA

Should make an interesting IPA, which Brett are you using?

Calling All HopHeads!! IPA Recipe Critique

Could also use Warrior to help the pine along. But honestly, this is my critique: I'd drop the 30 minute Simcoe, as it's not going to add a lot other than IBU. If you must use Simcoe early in the boil for IBU, move it to 60 minutes, and drop the amount to .5 or less. Change the Cascades to...

Critique this IPA and give me a mash temp

Thanks fellas. I'm debating it still. Gonna brew it though. Just need to get my new equipment here first :P

Critique this IPA and give me a mash temp

Ean, I'm not doing a 60 minute mainly because of the sheer number of varietals going in. Hell, .5 oz of Apollo at 60 minutes put me over 80 IBU, and I want this one to still have enough malt to stand up to the hops that are going to be in it. Will it still be hop forward in aroma/flavor? You...

    Using leftovers..

You could make an English Mild, but it would be with American hops: 3# 2 row 2.5# Marris Otter .5# Chocolate Malt .5 Cascade @ 60 .25 of both @ 15 .25 of both @ 5 Puts you around 3% ABV.

Here's a descriptor of Columbus from Brew Dudes: Columbus Hops | Brew Dudes I think they'd be a good idea for you, since they fit what you are looking for.

Looks pretty good to me man. Brew it!

    Pale Ale recipe Thoughts??

Okay, since this is sorta similar to my pale ale, I'll give you some hints: If at nothing more than the rest of your malt bill stays the same, leave the Carafa out. You're going to get plenty of color, trust me. That's my "pale ale/IPA" that turned out more like an IPA. It's only ~9 lbs 2...

My First Try at a Dark Horse Crooked Tree IPA Clone - Suggestions Please!!

Late hops do add a little bitterness, but not as much as a full boil. They add more flavor and aroma than anything else. Hop flavor is more than just IBU's though, perceived bitterness can be helped by a high hop flavor and aroma. My "mistake" IPA was only 35 IBU, and it was pretty hoppy to...

Which bittering hops should I invest in?

Northern Brewer works well, that's what I used in my first beer.

Which bittering hops should I invest in?

Another choice for bittering is Apollo, Rebel's batch is 18% AA currently, and it can vary from 18-22%. Description from Rebel: Usage: Bittering (but has some great aroma characteristics) Description: It's like Centennial, Columbus and Amarillo had a baby (and peed on it). Emphasis is on...

    Gumball Head Extract

Pony the money up for Beersmith. It works wonders. Edit: Free, I've used TastyBrew's online calc, but it's limited in ingredients and whatnot. Also, guy above is right, use one of the classic American ale strains for this one, I'd use 05 if you can't make a starter.

    Gumball Head Extract

You are going to have very little aroma/flavor and lots of bitterness with that hop schedule, dry hop notwithstanding. Three Floyds lists Gumballhead at 28 IBU and it uses Red Wheat. Here's what I'd do to make it a bit better: .75 @ 60 .5 @ 15 .5 @ 5 .5 @ flameout 2 oz dry hop for 7 days...
