    Any C hop should work well. Simcoe can be found, but it will be at a premium, more than likely. I've seen good things with Amarillo and Centennial.

    Yeah, the dreaded cat pee. I'd think if used for FWH, it wouldn't be nearly as bad, but most people do suggest limiting the amount used. I'd stick to the Chinook and Amarillo if those other 2 are all you have though.

    My two cents: Not enough late additions for hops. You are going to have a good bit of perceived bitterness without much flavor/aroma after the dry hops fade out. Late additions are key to aroma and flavor. Honestly, I'd do something like this: 7 g Amarillo and Simcoe at 60 14 g Amarillo...

    I think his reasoning is because with that much crystal malt it will be quite sweet. I think the Chinook is a bit too much overall. Many people have said Chinook when used in large amounts gets very "Catty". It's also supposedly pretty harsh as a bittering hop when used in large amounts...

    I would switch the Chinook and Cascades, you'd have better IBU that way and would keep the floral/fruity notes from the Cascades where they should be, in the flavor and aroma. Cascade + Citra sounds like a good combo to me. Otherwise, should turn out well, I think any good American yeast...

    Empryean Mango IPA

    Be careful with extract flavorings. Some are good, some are not so good. A local brewery uses mango extract in a wheat beer, and it tastes artificial.

    I didn't pay much attention the first time. 11% Crystal is going to be quite sweet. I'd use no more than 5% Crystal total.

    Just a guess, didn't quite know where to put it at. First time doing a Mild. :P I guess I should read the style guidelines a little better, says little to no hop aroma or flavor. Well then, when I get home, a little rework is in the making, me thinks.

    I recommend finding and trying Hop in the Dark if you haven't already. That's a damn good CDA/BIPA, and it's got a good bit of both pine and citrus character, at least it did to my palate.
