    Convenience. I don't see any brewing advantage from this. It's just that with modern electric automation, I don't feel like babysitting a batch that no longer needs babysitting. This way I can automate the boring waiting parts, and enjoy the fun bits.

    That's interesting. I can see how both would work. It's just a choice about whether you want to lift out the grain bed in the evening or the morning. I'm not aware of any advantages or disadvantages to keeping the grains in the mash overnight.
