    well I bottled this past weekend. Everything went pretty smooth, I got twenty 22 oz. bottles and twelve 12 oz. bottles. Room temps are still hot, so bottles are conditioning in a water bath in a cooler.

    Took another gravity reading today, no change, so looks like fermenting is done. I will let it go a couple more days, and bottle this weekend. I was surprised how much of a difference 4 days made since my last reading in regards to clarity and taste. Less bitter and less hazy.

    No that is not Diamond Head, although it does have a similar shape. It is Koko Head Crater on the eastside of Oahu.

    Thanks for the welcome, decided to brew up another style of pale ale over the weekend while waiting for the other first one. I guess the addiction is real!

    About 10 days into my first brew, a pale ale extract kit from the LHBS (Homebrew in Paradise). Due to temps here, I have been fermenting in a water bath. Just took my first gravity reading, it's at 1.011. Will check again in 3 days, and plan to bottle if FG is the same. Of course I had to taste...
