    You can use Briess Light DME which is 6 I think. Or you can use 3-4lbs of light, and 1lb of amber Muntons (I think the amber is 22). For the chocolate I would just use the darkest you can find, and maybe add a half oz, or .75oz. Run that through beersmith and see what you get. I'm at work...

    I personally do not cold crash, I have decent success using whirlfloc, and a 3 week primary. However, I think the consensus is that 3 days or so of a cold crash is enough. Someone with more experience on CC want to chime in?

    The beer will be just fine. Things will probably stay that way (slow bubbling) for maybe a day or two more, and then appear to stop completely. However things are still moving along nicely. Do yourself a favor and don't touch it for at least 2 weeks.

    Hit 1.051 OG. I pitched the S05 @ 69ish. The sample tasted a little more bitter than I'd hoped, but that should mellow during fermentation. Now the wait begins.

    Finally got around to brewing up an amber for my GF. Should be ready about half way through April. I was shooting for an amber a little on the sweeter side since she has been putting up with my IPAs for a while now. I'm about half way through the boil right now. I'll let you guys know how...
