    I have a kolsch fermenting right now, only my second 5 gallon brew! I would recommend leaving it in the primary for 2-4 weeks, the longer the better, especially with the temperature swings.

    Amber ale This one is a little bitter for my taste (I am not an IPA guy), I recommend using 2 to 2.4 gallons, I only did 2, so maybe a little less hops, and more wort would help the bitterness. Letting it condition right now, might drink another bottle this weekend (using the 1 litter bottles)...
