    Strangely fast carbonation

Decided to drink test bottle #3 at day 5... the flavor has changed significantly in one day and the carbonation has gone up a lot... goes to show what an extra day can do... Tastes a bit like sour rootbeer which is what came to mind. Can barely detect the cherries now...

    Strangely fast carbonation

I think it has to do with the cherries tbh, my neighbor did cherries in his IPA and it exploded but the gravity just dropped like a stone on his satellite which survived. Yeast was just Nottingham Ale yeast. It developed hefty yeast cakes in both the primary and secondary, way way bigger than...

    Strangely fast carbonation

OG was 1.056 FG was 1.002 It was pretty fizzy when i transferred from the secondary to the bottling bucket any chance that CO2 carried over? Maybe we should all carbonate with fresh cherries :P

    Strangely fast carbonation

Alright well it's only going to get to age as long as it takes me to drink it :P I really like the way it tastes now... ill probably save a few bottles to see what it could have been if it wasnt so tasty from the start.

    Strangely fast carbonation

Thanks, Got it to work! Yeah it absolutely needs a bit of aging... But I'm just surprised it didn't take the two weeks to carbonate... Nice beer though its less porter and more like a clone of Bell's Cherry Stout with a slightly lighter cherry flavor which is what I wanted...

    Strangely fast carbonation

I'm moving my discussion that I offtopiced in another thread to here because I'm trying to figure out why my beer is carbonated after 3-4 days. I took this video a little drunk last night(and decided to wait and review it in the morning before posting a drunken video, felt i sounded like a git...

    REALLY Late Oktoberfest

Thanks for the response, it might not be spectacular but it would still be festive :P

The waiting is the hardest part

After watching that video I think my beer's quick carbonation might have to do with the insane fermentation it went through and the obscene amount of CO2 it produced... The one I poured last night gave me about a pinky width amount of creamy white head and the beer had a little less than the...

The waiting is the hardest part

I bottled 24 new 22oz bottles for waiting and I bottled 3 recycled 12 oz bottles for tasting and testing... but mostly tasting... :P EDIT: and the reason that doesnt add up to 5 gallons is due to a bottling wand malfunction :( lesson learned muslin bag your dry hops...

The waiting is the hardest part

Actually I did crack one open just to try it and it's almost fully carbonated, mind you this batch of beer hasn't really done anything the way it was supposed to, and its pretty damn good. Exactly the amount of cherry taste i wanted it to extract from the fresh cherries... with a little aging i...

    REALLY Late Oktoberfest

Sorry for yet another slightly off topic question that I didn't want to start a new topic for, but why would it be late to start it? aging time? brewing time for the style?

The waiting is the hardest part

I just bottled my first batch on Tuesday... I didn't taste it because I was too busy trying not to make a massive mess... I doubt ill make it to the end of tonight(Brewing batch 3) without cracking open one of the 3 12 oz test bottles... MMM FLAT BEER!

Best cheap commercial beer you've ever had?

Where do you get a 30 pack at all? I only know of one place to get Genesee and that's at my local corner shop and they only have 6 packs of pint cans. I could probably just ask the company though that's what I did with Dundee and they sent me a list of everywhere in 20 miles to get Dundee and...

What BJCP style does this beer fit into?

Yeah I assumed since you didn't use vanilla so it wasn't a spice beer...

What BJCP style does this beer fit into?

Or just poke around the site and find what fits your specific brew... EDIT: Also how the hell did I get into the 2004 style guide... http://www.bjcp.org/docs/2008_Guidelines.pdf
